Mint Cupcakes

Yey mint cupcakes. I love minty cupcakes especially in summer! Mint flavour has always been the cooling flavour yummy flavour that is often popular in summer in many large stores.;-) If you happen to like it, then you may want to try out the mint cupcakes recipe posted below ;-). Not only are these cupcakes refreshing in tastes, it can look pretty good too with a frosty icy topping. Now, if you are all ready, amped up and eager to give this recipe a try, then check out the recipe below for ingredients and the instructions. It is very easy to bake on your own at home and makes a great tasting treat for everyone.

Here are all you need for the mint cupcakes:

  • ½ cup butter
  • 1 cup cocoa
  • 1 tsp. salt
  • ½ cup water
  • 1 cup all-purpose flour
  • ¾ cup granulated sugar
  • ¾ tsp. baking soda
  • 1 egg
  • ½ cup of yogurt
  • 1 tsp. vanilla extract
  • 16 mint cookies crushed

Baking instructions

First, preheat your oven to 350 degrees (Fahrenheit). You can also prepare your baking tray by lining it with paper cupcakes cups and grease it lightly with butter. Now, to begin, sift the flour and mix it with sugar and baking soda. You can then place this bowl aside and work on a second bowl.

In the second mixing bowl, whisk the egg, yogurt, vanilla extract and the crushed cookies. Set the second bowl aside and go heat up a saucepan on low to medium heat. Melt the butter, cocoa powder, salt and water together while stirring it all together. Once everything has melted, remove the saucepan from the heat and pour the mixture into the second mixing bowl which is the one with the egg, yogurt and crushed cookies.

Mix everything in the second bowl evenly and add in everything from the first mixing bowl that you have prepared earlier. Once you get a smooth batter with everything evenly mixed together, you can now pour the batter into the cupcake tray until ¾ full in each cup.

Now, you can place the tray into the oven and bake your cupcakes for 25 minutes. To check if your cupcakes are ready, simply use a toothpick and poke into your cupcake from the centre top. The toothpick should come out clean without any wet mixture sticking to it. Remove your cupcakes from the oven and let it cool in room temperature.

As for the icing top, beat ½ cup of butter until it turn all creamy and smooth. Then add 3 cups of powdered sugar or icing sugar into the butter. Add 1 tablespoon of mint extract and 2 tablespoon of milk into the mixture. Beat everything together until it comes out light and fluffy. With the icing prepared, you can now, frost your cupcakes with it.

After frosting it, your mint cupcakes are ready to be served and enjoy!
